Cupcakes, plum jam and chicken salad
We attempted a plum jam last week. Plums were picked at a friends house and we bought some strawberries to add. We also added allspice and cinnamon. I was a bit scattered while we were making it and added the pectin at the wrong time. So the jam didn’t really gel like it should have. It turned out super tasty though and we had some on our pancakes over the weekend. I can’t find the recipe we used now but they all seemed about the same anyway. We used way less sugar than the recipe listed though. I wonder if that might also be a reason it didn’t gel. Maybe I should read up on how pectin works…
Vim made some cupcakes for me for my birthday using my favorite godiva cake recipe and with cream cheese frosting. he made some cinnamon cream cheese frosting and some strawberry cream cheese frosting. It’s weird how the strawberry one tastes sort of fake even though it was made with actual strawberries. Still, I continue to love a cream cheese frosting more than a butter cream one.
While making broth last night out of one of those pre cooked chickens i thought maybe it was time that i learn to make my own yummy chicken salad. I’m eating it right now and it’s not great. I need to work on it. Clearly I need to drive about 40 miles to get my favorite chicken salad sandwich and pay more attention to whats in there. The one I just made is chicken, mayo, red grapes, cashews, celery, pepper, salt, poppy seeds and some garlic salt. it’s not perfect.

Happy Belated Birthday! I actually have a recipe for strawberry cupcakes with strawberry buttercream that doesn’t taste fake but no cream cheese… They’re pretty deadly.

I freaking HATE when I make something that I want to be SO GOOD, and then you take a bite of it, and it’s so blah.
I found an amazing chicken salad recipe once, but I generally don’t make chicken salad too much.
Also, I love the Arby’s Chicken Salad Sandwich. It’s so fattening tho.

I kid you not, that I just got an email from my gynecologists office, with a chicken salad recipe in it. The office now does all sortsa ‘woman’ shit, weight loss ad the like, and so they had a ‘low fat’ chicken salad recipe.
It does not look tasty.

I learned to cook by bringing home food that I liked and studying and analyzing the components and results, trying to figure out what was used and how they got to the final product. Go get that salad you like and figure out how to reproduce it!
